Food of origin detective

I work with the Lipids and Natural Products research team focusing on lipids and natural products chemistry. My advanced analytical skills support and develop industrial products being commercialised from original research.

I work in nuclear magnetic resonance (NMR) spectroscopy for natural products analysis. If you buy food like maple syrup, manuka honey or wine from the supermarket, I can tell whether it’s been adulterated or does not come from the specified place of origin using advanced NMR technology detection.

At the 2022 NZIFST conference I presented a paper on “Analysis of Trimethylamine N-oxide and Trimethylamine in marine oils by NMR”. I love working with world experts in the Callaghan Innovation lipids and natural products chemistry team and am proud that I’ve contributed to innovations in New Zealand food industries.
